Homemade Candy Bar: Coconut Mounds-The ‘healthy’ kind

These are scrumptious! There’s nothing like a home made candy bar that may be slightly healthy for you! These are absolutely one of my favorite ‘treat’ recipes i have. Not only because a dear friend who has since passed shared the recipe with me, but because it’s just super delish!

I usually 1/2 the recipe because i’m the only one who eats them, i cut them in half, pop them in the freezer and try to make them last as long as i can! If you make the full recipe you will have bigger ‘mounds’ and more of them.

Homemade Candy Bar: Mounds Cups

Ingredients

1 1/3 Cup coconut flakes

1/2 Cup coconut oil

1/4 Cup honey (or other sweetener)

1 tsp almond extract

handful of thin sliced almonds

3/4 Cup coco powder (or dark chocolate)

1/4 Cup of honey

1 Cup coconut oil

1 table spoon vanilla extract

Instructions

1-melt coconut oil and honey on low heat. Whisk and add in almond extract and coconut flakes

2-Put almonds in the bottom of tin muffin pan. Divide the coconut mixture between all the cups

3-Freeze 30min-till hardened

chocolate sauce

1-combine coco powder (or dark chocolate), honey, oil, and vanilla and place over simmering water till everything is just melted. Whisk to combine well.

 

2-divide chocolate over the frozen coconut mixture

3- place back in freezer until chocolate hardens.

4-Then sit down and enjoy these.

I can’t resist any longer, I’m going to go get one right now! And actually chopping up some maraschino cherries and adding it to the coconut mixture would be AWESOME.

*note in the pictures posted i forgot to half the coco powder so my chocolate wasn’t as smooth as it normally would be. But it didn’t hurt the recipe one bit. You really can’t mess this one up.

  2. Just made these with some slight variations and they are delicious! Used homemade coconut oil and crushed mint leaf instead of the almond/ vanilla extract. YUM!
